"I use the Hestan 14” domed lid over my 14” cast iron skillet to cook a spatchcocked chicken in 24 minutes on the stove top (12 mins a side about). Absolutely delicious — juicy and flavorful. I also do the same with chicken thighs at 10-12 minutes a side on medium low flame. Covering the skillet with the dome on medium low gives you the action of frying and oven baking at the same time."
