Make the Wings
Preheat oven with fan on to 350 degrees.
Place all the seasoning ingredients into a large bowl and mix well.
Place the chicken wings into the bowl and mix well until fully coated in the seasoning. If the wings are very cold, the tallow may seize up. You can fix this by placing the bowl into the oven for a couple minutes to warm the outside of the wings to get the seasoning to evenly coat.
Place the wings on a sheet tray with a wire rack or on parchment paper.
Place the wings into the oven for 20 minutes, then flip the wings over and continue to cook for an additional 15 minutes or until a thermometer reaches 185 – 195 degrees.
Remove the wings from the oven and squeeze the lemon juice on them.
Make the Dipping Sauce
While the wings are baking. Place all sauce ingredients into a small bowl and mix well until fully incorporated.
Plate the Dish
Place the chicken wings onto a large platter or serving dish while still warm. Place the dip into a small bowl and serve alongside the wings.
Garnish with grilled lemon, minced fresh chives, and fresh parsley leaves.
