"I am a commonsense person, and well, some things just make common sense. When you are sauteing, a traditional spoon only rides across the bottom of the pan in that one tiny spot on a curved spoon. With the sauté spoon, you can use the flat edge to grab the sauce evenly across the bottom of the pan taking less time to pull from the hottest part of the pan and pulling into the sauce to mix evenly. To me. . . it makes sense, and I have enjoyed using it, especially when making alfredo sauce."
