These crispy onion rings are a perfect snack or side dish, featuring a crunchy coating that contrasts beautifully with the sweet, tender onions inside. Fried to golden perfection, they are seasoned just right for a deliciously addictive treat.

Ingredients

    • 2 yellow onions, peeled and sliced into ¼" rings

    • 1 cup all-purpose flour, seasoned with kosher salt and fresh cracked black pepper

    • 6 eggs, whisked until smooth

    • ½ loaf crusty bread, torn into small pieces or 2.5 cups Panko breadcrumbs

    • Grape seed oil or canola oil, for frying

      1. Preheat oil in a large pan or Dutch oven to 350 degrees.

      2. Tear the bread up into small pieces and place in the oven to dry out. Once dried and crunchy, place the pieces into a food processor and pulverize down into crumbs.

      3. Gather 3 medium sized bowls. Place the flour in one and season with salt and pepper. Place the eggs into another one and whisk until a smooth consistency. Place the breadcrumbs in the third bowl. Set aside.

      4. Peel the onion and slice the onion into ¼" rings. Separate the layers of the onion slices into individual rings.

      5. Place the rings into the bowl of flour and toss well. Place the floured onion rings into the egg mixture to fully coat. Then repeat this step so that after the rings get dipped in the eggs, they will go back into the flour and back into the egg wash a second time. Then coat the rings well in the breadcrumbs.

      6. Place onion rings gently into the hot oil to fry. You can do this in batches depending on the size of the pot, so you do not crowd it. Cook until evenly golden brown or about 2-3 minutes.

      7. Once cooked, remove the onion rings from the oil and place on a tray or plate lined with paper towels to soak up any extra oil. Season with kosher salt.
