This creamy potato puree is a luxurious side dish, perfect for any meal. Made with Yukon gold potatoes, garlic, and finished with a drizzle of extra-virgin olive oil, it offers a rich and velvety texture that pairs beautifully with meats or vegetables.

    • 2 lb. Yukon gold or another yellow potato, peeled and rough chopped

    • 4 cloves of garlic

    • Kosher salt

    • 1 ¼ cup cream

    • ½ stick butter

    • 1 bunch chives, minced

    • Extra-virgin olive oil, for garnish

    Directions

      1. Peel and rough chop the potatoes and add them to a pot of cold salted water with the garlic.

      2. Bring to a simmer and cook the potatoes until tender, about 10-12 minutes.

      3. Once the potatoes are fully cooked, strain them out from the water and set aside.

      4. In a sauté pan over medium-low heat, bring the cream and butter to a simmer.

      5. Place the potatoes into a ricer and mill the potatoes into the pot with the cream and butter. Using a whisk, gently fold everything together. Season with salt and pepper to taste.

      6. Serve the potatoes warm and garnish with chopped chives and drizzle with good extra-virgin olive oil.
